- 1 large (on-the-bone) chicken breast cooked and shredded (save time and cook the day before)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 (15-ounce) can black beans, drained
- 1 (4 ounce) can green chiles
- 1/2 cup salsa, no sugar added
- 1 cup Mexican style shredded cheese
- 1 (16-ounce) jar red enchilada sauce, no sugar added
